- 1 lb ground beef
- 1cup chopped onion
- 1 cup chopped green pepper
- 2 cups canned tomato
- 1 clove minced garlic
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 dash cayenne
- 1 dash paprika
- 1 medium can kidney beans
- Pan fry ground beef, onion and green pepper in skillet until meat is brown. Drain fat.
- Add remaining to ingredients except beans and bring to a boil. Reduce heat, cover and simmer until thick (about 1 hour). Stir in beans and heat.
- For dried kidney beans - use ½ lb (for standard serving size). Wash, and cover with boiling water. Cook 2 minutes and removes from heat.
- Soak for 1 hour then bring to a boil, reduce heat and simmer until tender.
