Ingredients :
= 500g/1 lb sausage mince
= 2 tablespoons chopped fresh parsley
= 1 teaspoon curry powder
= ½ cup/60ml/2fl oz milk
= 1 egg, beaten
= 4 hard boiled eggs, peeled
= ½ cup/60g/2 oz flour
= 1 cup/125g/4oz dried breadcrumbs
= Vegetable oil for deep frying
Method :
- Place mince, parsley and curry powder in a bowl and mix to combine. Divide mixture into four equal portions. Place each portion on a piece
of plastic food wrap and press in 12 cm /5 in circle. - Combine milk and egg in a shallow dish. Dip hard boiled eggs into milk mixture then roll in flour to coat. Place an egg in the centre of each mince circle and mould around egg to enclose. Dip wrapped egg in milk mixture, then roll in breadcrumbs to coat.
- Heat oil in a saucepan until a cube of bread dropped in browns in 50 seconds. Deep-fry eggs, two at a time, for 5-6 minutes or until golden. Drain on absorbent kitchen paper and cool completely. Cut in half to serve.
