ingredients :
12 eggs
1 teaspoon dry mustard
1 teaspoon curry powder
2 tablespoons mayonnaise
2 tablespoon thickened (double) cream
snipped fresh chives or dill
Method :
- Place eggs in a saucepan, cover with cold water and bring to the boil. Stirring gently will keep the yolks centred. Discontinue stirring, reduce heat and simmer for 10 minutes. Drain eggs, then rinse under cold running water until cool enough to handle.
- Peel eggs and cut in half lenghtwise. Remove yolks and place in a bowl. Set white aside. Add mustard, curry powder, mayonnaise and cream and mash until mixture is well combine and smooth.
- Spoon egg yolk mixture into a piping bag fitted with a small star nozzle and rosettes into reserve egg white shells. (If want)Garnish with chives or dill.
