Russian Beef Stroganoff

Ingredients :

• 2 lb sirloin or tenderloin steak
• 4 tablespoon butter
• ½ tablespoon minced onion
• ½ lb sliced mushroom
• ½ pt sour cream
• Salt
• Nutmeg
Method :

1. Pound sirloin or tenderloin very thin and cut into near finger-shaped pieces.
2. Melt ½ butter in a large heavy pan. Add onion, cook and stir until onion is tender. Add beef, cook quickly, about 5 minutes, browning on all sides. Set aside.
3. Sauté mushrooms I remaining butter. Season with salt, pepper, and nutmeg and add to beef. Add cream, heat and season delicately to taste.
4. Serve over buttered noodle.

Mexican Beef Enchiladas













Ingredients :

• 1 lb cooked ground beef
• 1 minced onion
• 2 cans diced chili pepper
• 1 clove minced garlic
• 2 pints tomato sauce
• ½ teaspoon salt
• 1 beaten egg
• ½ lb grated cheddar cheese
• ½ lb soft tortillas
• Olive oil
• Red sauce

Method :

1. Heat ½ inch of oil in skillet and fry tortillas about 15 second each side. Then remove and pat off excess oil.
2. In separate skillet heat 2 tbl oil (quantity for standard serving size) and sauté onion until tender. Add chili pepper, garlic, tomato sauce, salt, and pepper. Add ground beef. Simmer uncovered for 10 minutes.
3. Dip tortillas in egg, fill with sauce mixture roll and place in shallow greased baking dish.
4. Pour red sauce over tortillas, top with grated cheese and baked uncovered at 350oF for 15 minutes.

Mexican Beef Rellenos









Ingredients :

• 1 lb ground beef
• ½ minced onion
• 1 clove minced garlic
• ½ teaspoon chili powder
• 1 teaspoon salt
• 1/3 cup tomato sauce
• 8 chili pepper
• 4 eggs
• ¼ cup olive oil
• ¼ cup flour

Method :

1. In large skillet, sauté meat until light brown. Drain excess fat.
2. Add onion, garlic, chili powder and salt. Sauté for 3 minutes. Add tomato sauce and simmer for 10 minutes. (If using fresh chilies, place under broiler for about 8 minutes. Split chilies down one side, then remove skin and seeds.)
3. Stuff inside with meat mixture and roll in flour. Have ready a large skillet filled with 1/4” oil.
4. Separate eggs. Beat whites stiff ; beat yolks light. Then folk yolks into whites.
5. Lightly dunk pepper in mixture, ease into hot oil in skillet and cook until golden brown. Remove

American Beef Stew













Ingredients:

• 3 lbs cubed stew beef
• ¼ cup butter
• 1 medium chopped onion
• 1 can tomato (8-oz)
• 2 cloves minced garlic
• 6 cut-half carrot
• c stalks chopped celery
• 6 peeled halved potato
• 10 small pearl onion
• 2 tablespoon parsley
• 1/8 teaspoon ground thyme
• 1 ½ teaspoon salt
• ½ teaspoon pepper
• ¼ cup flour
• 2 cubed beef bouillon

Method :

1. Lightly salt and pepper beef cubes and coat with flour.
2. In hot skillet, sauté with butter fluuored beef cubes until lightly browned.
3. In a heavy pot, sauté onion until clear.
4. Add meat, can of whole tomato, 3 cups water (quantity of standard serving size) ,bouillon, garlic, parsley, thyme, salt and pepper.
5. Cover, simmer 1 ½ hours. Then add carrots, celery, potatoes, and small onions. Cook until tender, about 1 hour.

Note : You can add 1 cup of red wine after the 4th method if desired

Beef Bourguignon










Ingredients:

• 3 lb cubed stew beef
• 1 ½ cups brandy
• 2 ½ cups red wine
• ½ cup butter
• ½ lb whole mushroom
• ½ lb pearl onion
• c tablespoon tomato paste
• 2 cloves chopped garlic
• 1 bay leaf
• ½ teaspoon thyme
• 1 can beef stock (10.5 oz)
• ¼ cup flour

Method :

1. Marinate beef in 1/3 of brandy and wine for at least 1 hour. Turn occasionally.
2. In large heavy skillet heat half the butter until foamy. Mix together flour with salt and pepper to taste
3. Roll beef cubes in flour, place in hot butter and brown, remove cubes as they are done.
4. In separate skillet, heat remaining butter. Add onions, then stir, cover, simmer over low heat for 2 minutes. Add mushrooms, turn up heat and sauté for 3 minutes.
5. Remove fro heat add tomato paste, garlic and 1 tbl flour. Mix until smooth.
6. Add remaining brandy, red wine, beef stock, bay leaf, thyme, salt and pepper. Boil, reduce heat. Simmer for 15 minutes.
7. Add beef and simmer 1 ½ hours.

Mexican Chili Con Carne










Ingredients :

  • 1 lb ground beef
  • 1cup chopped onion
  • 1 cup chopped green pepper
  • 2 cups canned tomato
  • 1 clove minced garlic
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 dash cayenne
  • 1 dash paprika
  • 1 medium can kidney beans
Method :
  1. Pan fry ground beef, onion and green pepper in skillet until meat is brown. Drain fat.
  2. Add remaining to ingredients except beans and bring to a boil. Reduce heat, cover and simmer until thick (about 1 hour). Stir in beans and heat.
  3. For dried kidney beans - use ½ lb (for standard serving size). Wash, and cover with boiling water. Cook 2 minutes and removes from heat.
  4. Soak for 1 hour then bring to a boil, reduce heat and simmer until tender.

Chinese Pepper Steak








Ingredients :

  • 1 lb round steak
  • 2 sliced green pepper
  • 2 quarter tomato
  • 4 chopped onion
  • 4 tablespoon soy sauce
  • 1 cup bean sprout
  • ¼ cup butter
  • ½ teaspoon sugar
  • ½ teaspoon cornstarch
  • 1 clove minced garlic
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • 2 tablespoon water
Method :
  1. Slice steak thinly in short cross-wise pieces. Heat butter in skillet and add garlic, salt and pepper. Add beef and brown on both sides.
  2. Add soy sauce and sugar. Then, cover and simmer for 5 minutes. Add rinsed sprouts, tomatoes and green peppers ; cover and simmer for about 5 minutes.
  3. Dissolve cornstarch in water and stir in until sauce is thicken. Sprinkle with onions and serve on rice.

Beer Broiled Beef

Ingredients :

  • 4 lbs cubed beef
  • 1 pint beer
  • 4 tablespoon butter
  • 3 sliced onion
  • 1/5 cup flour
  • 4 tablespoon salad oil
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 2 cloves chopped garlic
Method :
  1. Melt butter in large skillet and Sauté onion until tender. Dredge beef cubes in flour and brown them in a separate skillet with oil and butter.
  2. Add browned meat, salt, pepper and garlic to onion mixture.
  3. Add enough beer to cover. Cover tightly and simmer until meat tender.

Beef Carpaccio






ingredients :

  • 450g/1 lb beef fillet, sliced into 4 mm/1/8 in slices
  • 100g/31/2 oz rocket, washed
  • 15ml/1 tablespoon balsamic vinegar
  • 45ml/11/2fl oz extra-virgin olive oil
  • Pecorino cheese shaving
  • Freshly ground black pepper
  • Salt
Method :
  1. Lightly oil a sheet of greaseproof paper and season it lightly with salt and freshly ground black pepper.
  2. Arrange 4 slices of beef on this (approximately 5cm apart). Place another oiled piece of greaseproof paper on top, and gently beat the meat(until it has spread out to at least twice it former size). Repeat with the remaining meat slices.
  3. Refrigerate until needed. Alternatively, partly freeze the meat (before slicing thinly).
  4. Place some rocket in the centre of the plate, arrange the beef slice around the rocket, and drizzle with some balsamic vinegar and olive oil.
  5. Serve (drizzle with balsamic vinegar and extra virgin oil) with shavings of Pecorino cheese and black pepper.

Cocktail Meatballs







Ingredients :

Meatballs

  • 250g/9oz minced beef
  • 1 onion, grated
  • 2 tablespoons dried breadcrumbs
  • ½ teaspoon salt
  • 1 egg
  • ¼ teaspoon pepper
  • ¼ teaspoon oregano
  • 1 teaspoon chopped parsley
  • 1 teaspoon tobacco sauce
Filling
  • 8 prunes, pitted and chopped
  • 1 tablespoon pine nuts, coarsely chopped
Method :
  1. Mix mince and all ingredients for meatballs together, knead well with hands until mince becomes fine in grain. Allow to stand for 15 minutes before rolling.
  2. Combine prunes and pine nuts. Wet palms of hands to prevent mince sticking, take about a tablespoon of mince, roll into a ball then flattened in palm of hand.
  3. Place 1/2 teaspoon of filling in centre and remould into a smooth ball. Space around edge of large dinner plate, glaze meatballs with Worcestershire sauce.
  4. Cook in microwave on high for 5 minutes. Cover with foil and stand 11/2 minutes.
  5. Serve with a spicey plum dipping sauce.
Variations :
Dried apricots or raisins may be used instead of prunes and walnuts, and almonds in place of pine nuts. You can also make the meatballs without the stuffing, but cook 4 minutes only.

Prosciutto - Wrapped Asparagus








Ingredients :

  • 250g/80 oz fresh asparagus, spears, trimmed
  • 4 slices prosciutto or lean ham
Method :
  1. Boil, steam or microwave asparagus until just tender. Drain and rinse under cold running water until cool. Drain asparagus again and dry on absorbent kitchen paper.
  2. Cut each slice or lean ham lenght-wise into 3 long-strips and wrap each strip around an asparagus spear. Cover and refrigerated until required.
