Almond Chicken

Ingredients :

  • ½ cup slivered almond
  • 2 ½ cups cooked chicken
  • 4 tablespoon butter
  • ¼ cup flour
  • ¼ cup white raisin
  • ½ cup sliced mushroom
  • 1 cup evaporated milk
  • ½ cup sherry
  • Dash salt
  • Dash pepper
Method :
  1. Melt half of the butter in a large skillet. Sauté mushrooms for about 2 minutes.
  2. Add rest of butter, flour, salt and pepper to taste. Then, add raisins and sherry.
  3. Cook until sherry has been absorbed. Add milk and simmer for about 10 minutes.
  4. Serve topped with almonds over rice or toast.

Chicken Parmesan









Ingredient :

  • 2 lb boned chicken
  • ½ cup bread crumbs
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 beaten eggs
  • ½ cup Parmesan cheese
  • 1 teaspoon oregano
  • 1 cup white wine
  • ¾ cup salad oil
Method :
  1. Pound chicken until thin. Pat dry and cut into pieces.
  2. Combine breadcrumbs, Parmesan cheese, spices and salt. Set aside.
  3. Beat eggs in a shallow dish. Dip chicken into egg, then into the crumb mixture, coating both sides.
  4. Heat oil in skillet. Sauté chicken until brown or for about 3 minutes each side. Remove to warm platter.
  5. Drain fat, stir in wine scraping up brown residue until boil.
  6. Pour over chicken.

Chicken Marengo






Ingredients :

  • 2 ½ lbs chicken
  • 1 teaspoon salt
  • 1 dash pepper
  • 4 tablespoon olive oil
  • 1 chopped onion
  • ½ clove minced garlic
  • ½ cup chopped tomato
  • ¼ cup sherry/white wine
  • 2 tablespoon flour
Method :
  1. Cut chicken into pieces. Then, sprinkle with salt, pepper and fluor.
  2. Deep fry chicken in olive oil until golden. Set aside.
  3. Sauté onions and garlic in same pan. Add chicken and rest of ingredients, cover and simmer for 30-40 minutes or until tender.

Chicken Satay






ingredients :

  • 500g/1 lb chicken breast, cut into 2cm /¾ in cubes
  • 125 ml/4 fl oz water
  • 2 tablespoon honey
  • 1 tablespoon light soy sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon grated fresh ginger
  • 1 onion, finely chopped
  • 1 teaspoon sambal oelek or Tabasco sauce to taste, optional
Method:
  1. Combine water, peanut butter, honey, soy sauce, lemon juice, ginger and onion in a bowl. Stir in sambal oelek, if using, and mix well. Add chicken cubes, cover and marinate for at least 2 hour or overnight.
  2. Soak cocktail sticks in cold water 30 minutes, then drain. Remove chicken from marinade. Thread two pieces of chicken on each cocktail stick and set aside.
  3. Pour marinade into saucepan, bring to the boil, lower heat and simmer for about 10 minutes, or until sauce is reduce and thickened minutes, or until sauce is thickened.
  4. Cook chicken for about 10 minute under moderate grill or over hot coals, until tender. Serve satay sticks, offering dipping sauce separately.
Note : You'll need some good-quality wooden cocktail sticks for this recipe.

Chicken Galatine Slice






Ingredients :

  • 3 double boneless chicken
  • Breast fillet
  • 9 slices Prosciuto or lean ham
  • 15 pitted dessert prunes
Savoury filling
  • 375g/12 oz chicken mince
  • 200g/6½ oz sausage mince
  • 1 onion, finely chopped
  • 3-4 tablespoon chopped parsley
  • 2 cloves garlic, crushed
  • 1 egg, lighty beaten
  • freshly ground black pepper
Method :
  1. To make filling, place chicken and sausage minces, onion, parsley, garlic, egg and black pepper to taste in a bowl and mix to combine.
  2. Place each chicken breast fillet, cut side up, on a flat surface between sheet of plastic food wrap and pound lightly to make a flattened rectangle. Lay 3 slice prosciuttoPlace one-sixth of the filling lengthwisedown the centre, top with a row of 5 prunes and cover with another one-sixth of the filling.
  3. Wrap fillets around filling to enclose and tie at 2 cm interval with kitchen string. Wrap rolls in lightly buttered aluminium foil and place baking dish.
  4. Bake for 30 for minutes, remove rolls from foil and bake for minutes or until chicken is cooked. Wrap rolls in clean aluminium foil and rafrigerate for seberal hours or until cold. To serve, remove string and cut into 1cm/½ in thick slices.
Make about 45.

Chicken Yakitori


Ingredients :

        • 400g/14oz chicken, stir fry
        • 1/2 cup/120ml/4fl oz soy sauce
        • 1/4 cup/60g/2fl oz honey
        • 1/2 teaspoon ground ginger
        • small bamboo skewers, soaked
Method :
  1. Place chicken in a glass bowl, mix in the soy sauce, honey, garlic, and ginger. Cover, place in refrigerator and allow to marinate for several hours or overnight.
  2. Thread one or two strips onto each skewer, using a weaving motion. Brush with marinade.
  3. Heat grill or barbeque to high. Grease rack or plte with oil arrange the skewers in arow. Cook for 2.5 minutes on each side, brush with marinade as they cook. Serve immediately.
Makes 25 small skewers.
